Vendor shall at all applicable times keep a time and temperature log for all non-shelf stable items used for an Event. Logs are required at the onset of every Event and every two (2) hours for items held below 40 degrees and above 140 degree Fahrenheit. Logs are to be held for not less than thirty (30) days after an Event and must be provided to Food Fleet promptly upon request.
Menu: Regular truck menu with a vegetarian/Vegan/GF option
Guaranteed Minimum: $1,500.00
Commission: 12% of net sales (before tax and tip) or Guaranteed minimum (whichever is higher)
# of trucks: 2 savory truck per shift
Payment: Guests to pay via cash or card
